Overnight Chia Pudding

This is the first recipe I tried to make when I was initially introduced to raw food. It's really easy to make and no cooking skills are required at all! I introduced this to my husband and he has been having it for his breakfast faithfully for the past 2 years. Needless to say, its done wonders for his "system"!

 

Here's what you need in order too serve 2 cups or jars. I would use mason jars or just any recycled glass jar.

 

INGREDIENTS

  • 6 tablespoons chia seed (most health food stores stock them although I buy most of my supply on iHerb.com)

  • 2 cups unsweetened coconut, almond or cashew milk (My favourite is coconut milk which I buy fresh from the grocery store or wet market)

  • 1/2 teaspoon vanilla extract

  • 1 tablespoon maple syrup or honey (or any low GI sugar of your choice)

  • blueberries, strawberries and bananas for topping

 

INSTRUCTIONS

 

Place your chia seed and choice of milk in the jar with the maple syrup and vanilla extract.

 

Stir or shake the jar (if you have a lid on)

 

Leave it in fridge over night.

 

And the next morning add the fruit toppings on the chia pudding.  

 

Tip: Use a spoon to check the consistency of the pudding before you start eating it. If it's too watery, it means you've added too much milk and i would simply adjust the quantity the next time. Alternatively, try adding another spoon of chia to the watery pudding and let it sit in fridge for another 30 mins before eating it. 

 

Super easy peasy right?
